Bisi Bela Bhath

Bisi Bela Bhath

Ingredients
  • 1 cup long-grained Rice
  • ¾ cup Toor Daal
  • 2 cups Mixed Vegetables (Carrots, Beans, Potatoes, Peas)
  • 1 cup Tamarind Juice (soak golf ball sized lump of tamarind in 1 cup water for 15 minutes. Squeeze out juice.)
  • 3 tbsp Bisi Bela Bhath Masala
  • 2 Tomatoes, chopped
  • ¼ cup Peanuts, roasted
  • 1/2 cup Coconut, shredded
  • 1 tsp Garlic Paste
  • 1 tsp Ginger Paste
  • 10 Cashew Nuts
  • 3 tbsp Ghee
  • 2 tbsp oil
  • 6 Curry Leaves
  • 1 tsp Mustard Seeds
  • 2 Onions, thin sliced
  • Salt to taste
  • Coriander Leaves to garnish
Instructions
  1. Wash toor dal & rice.
  2. Add mixed vegetables and 2 cups of water to it.
  3. Half cook it in a pressure cooker. Keep aside.
  4. Heat oil in a pan and add the mustard seeds and curry leaves. When they stop spluttering add ginger-garlic & onions and fry till soft.
  5. Add tomatoes, when they turn soft add bisi bela bhath masala. When it start leaving oil at corners add peanuts, coconut & cooked rice-dal and vegetables.
  6. Add the tamarind juice and 1 cup of water to this and bring to a boil.
  7. Add salt to taste and cook till all ingredients are done.
  8. Heat a little ghee and fry cashew nuts until golden brown in color.
  9. Add it to the rice just before ready to serve.
  10. Garnish with coriander leave.
  11. Serve hot with boondi raita.

Paneer Paratha

Paneer Paratha is a comfort food for me. I am angry, upset or not feeling good about anything, give me Paneer paratha & I will forget everything. My Mom used to make it quite often for me (oh! I miss it) & no matter how many times I try still I miss the same taste.

Ingredients
  • 2 cup whole wheat flour
  • 2 tbsp oil
  • For stuffing:-
  • 2 cup crumbled Paneer
  • 1 tsp roasted cumin seeds
  • ½ tsp coriander Pd
  • ½ tsp garam masala
  • ½ tsp red chilli Pd
  • ½ tsp chaat masala
  • Salt to taste
  • Small bunch coriander leaves chopped
  • (Add green chillies up to taste)
Instructions
  1. Knead a smooth and firm dough with the help of little oil & water. Keep it aside for few minutes.
  2. Mix all the ingredients for stuffing
  3. Take a ball of the dough and flatten each ball a little, then put 2 tbsp. of paneer mixture in the center.
  4. Cover the stuffing by gathering the edges
  5. Press on the floured board & roll out in to a round paratha
  6. Put paratha on a hot tava, cook until brown from both sides.
  7. Serve hot with butter, pickle or curd.

I still remember when I got married & came to US first two days I don’t have to bother about food, we were eating out and then we went to grocery store & there the reality struck. Its not that cooking was a new term to me but cooking with out taking instructions & help of my mother & grandmother was something new and different. Newly married, nervous but with lot of confidence I cooked bhindi (okra) & burnt it but my husband M ate it like nothing happened though he didn’t say anything but I felt really bad. That day I realized that I used to cook before but all on my mother’s instructions. That means it’s a new world to me and has to start cooking from scratch without my mother’s help. M always been very encouraging to me & till today he is my guinea pig. And i like cooking for him.
